Sporty: Garden Vegetable Soup

Need to get in your vegetable servings? Try this quick soup lovingly called zero point soup.
Garden Vegetable Soup (4 svgs)
2/3 c sliced carrot, 1/2 c diced onion, 2 garlic cloves ,3 c fat free vegetable broth, 1 1/2 c diced green cabbage 1/2 c green beans, 1 tbsp tomato paste, 1/2 tsp dried basil, 1/4 tsp oregano, 1/4 tsp salt,1/2 c diced zucchini

  • In a large saucepan sprayed with cooking spray, saute 2/3 c. onion and 2 minced garlic cloves until softened, about 5 minutes.
  • Add 3 c. ff broth, 1 1/2 c. diced cabbage, 1/2 c. green beans, 1 TBSP tomato paste, 1/2 tsp basil, 1/4 tsp oregano and 1/4 tsp salt. Bring to a boil.
  • Lower heat and simmer, covered, about 15 minutes or until beans are tender.
  • Stir in 1/2 c. diced zucchini and heat 3-4 minutes.

Pair this with your favorite salad and you could wipe out your veggie goal in one meal!!!

This is a core food. It is also zero points per serving. Substituting other non-starchy veggies should create the same concept.

And if you substitute olive oil instead of cooking spray, you could get a heatlhty fat in, right?? =)

Yes! Of course it will no longer be zero point soup but whose counting points :-)
